Restaurant Manager

This role is responsible for managing The Glenturret Lalique Restaurant and all areas of the Restaurant operations from Michelin star dinner service, bar lunch and private events.

You will be responsible for providing an entrepreneurial leadership style that inspires enthusiasm whilst ensuring the restaurant is operating to the highest quality service and product standards expected, creating and fostering an environment that is team-oriented, professional and delivers a sharing service culture within the area that will ensure the experience leaves our guest feeling reassured and taken care of. 

Key Responsibilities

  • To ensure that service standards are consistently high to deliver a premium guest experience.
  • Follow current F&B trends and introduce any new initiatives to the restaurant that would benefit the business in a positive way. 
  • Drive revenue and meet or exceed budgeted and forecasted revenue targets. 
  • Control costs and expenditures in line with business levels and budgeted KPI targets. 
  • Manage the recruitment, retention and training of your team including carrying out job and performance reviews and PDPs. 
  • To have sound knowledge of payroll ensuring this remains in line with business levels and budgeted targets. 
  • To ensure effective and fair rostering to maximise productivity and contracted hours are adhered to. 
  • To work with, build and maintain positive working relationships with all departments in The Glenturret. 
  • Implementation of a training plan to ensure continual growth and development of the Restaurant team.
  • Developing, coaching, mentoring and oversight of the Restaurant team, including hands on support.
  • Respond to guest queries and complaints timeously and professionally.
  • Understand and ensure licensing laws are complied with.
  • To be aware of and comply with Legal, Government and Company Policies relating to Fire, Hygiene, Quality and Health & Safety. 

  • Knowledge, Skills & Core Competencies

    • Proven work experience in a high quality, fine dining or Michelin Star Restaurant.
    • Extensive food and beverage knowledge.
    • Strong leadership, motivational and people skills.
    • Acute financial management skills and commercial awareness.
    • Good eye for detail and the ability to prioritise tasks effectively to ensure efficient time management.
    • Excellent interpersonal and communication skills.
    • Strong Organisational and Problem-solving skills.
    • Ability to lead, mentor and support a team to provide an exceptional level of service.
    • Hold a Personal Licence Certificate – or undertake training to secure the qualification.
